New England Wild Blueberry Coffee Cake

 
  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 1/2 cups fresh blueberries
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup butter or margarine (melted)
  • TOPPING:
  • 1/4 cup butter or margarine (Melted)
  • 3/4 cup packed brown sugar
  • 1 tablespoon all-purpose flour
  • 1/2 cup chopped walnuts
  1. In a large mixing bowl, combine flour, sugar, baking powder,
  2. cinnamon and salt.
  3. Gently fold in blueberries. In a small bowl, whisk
  4. together the egg, milk and butter. Add to the flour mixture and stir
  5. carefully.
  6. Spread into a greased 8-in. x 8-in. baking pan. Combine
  7. all topping ingredients and sprinkle over batter.
  8. Bake at 425 F 218 C for 20-25 minutes or until top is light golden brown.
  9. Serve warm or at room temperature.
