Ingredients

3 cups of flour

¾ cup of sugar

½ tsp of salt

1 ½ tbsp of baking powder

2 eggs – well beaten

4 tbsp lemon zest grated rind

1 ½ cup of milk

2/3 cup of melted butter

2 cups of fresh or frozen wild blueberries

¼ cup of melted butter 2nd amount

1 tbsp of lemon juice

¼ cup of sugar 2nd amount

Instructions

Step 1
Mix dry ingredients. Whisk egg, zest milk and melted butter. Stir in dry ingredients. Stir in blueberries. Fill Muffin tins 2/3 full.
Step 2
. Bake 20 minutes at 400 degrees F or 200 degrees C.
Step 3
While baking, combine second amount of butter with lemon juice. Put second amount of sugar in a bowl.
Step 4
When muffins are slightly cool, dip tops into lemon butter then sugar.
