1/4 cup margarine softened

1/2 cup sugar

1 egg

3/4 cup milk

1/4 tsp vanilla

1 3/4 cup plus 1 Tbsp. flour divided

2 1/2 tsp baking powder

1/2 tsp salt

1 cup wild blueberries

Instructions

preheated 425 f or 218 c
Step 2
In small bowl, stir together 1 3/4 cups flour, baking powder and salt.
Step 3
Cream margarine and sugar until light and fluffy then add egg, milk and vanilla.
Step 4
Add milk mixture to flour mixture, stirring just until dry ingredients are moistened (batter will be lumpy). Toss berries with remaining 1 tablespoon flour; fold into batter.
Step 5
Spoon into 12 greased muffin cups.
Bake 25 minutes or until evenly golden brown.
